On my most recent trip to the Yucatán in Mexico, I was fortunate to experience some truly exceptional cuisine. The preparation and enjoyment of food have a unique way of bringing communities together, and I love immersing myself in the local culture, exploring, and learning as much as I can so that I can savor my experiences not just as a tourist, but with a genuine appreciation for the local scene.

During this trip, I had the pleasure of dining at KI’IS in Kanai, a culinary gem led by Chef Francisco “Paco” Ruano, who hails from Guadalajara. Chef Ruano is highly trained in both Mexico and Europe, bringing his expertise and passion back home through his acclaimed restaurant Alcalde in Guadalajara and now KI’IS in Kanai.

At KI’IS, Chef Ruano reinterprets classic Mexican dishes using local, seasonal ingredients, honoring contemporary Mexican flavors inspired by Mexico’s Pacific coast. We began with a unique take on traditional guacamole, elevated with fresh pistachios and cocoa nibs. The catch of the day was prepared with a light citrus sauce and cilantro, highlighting locally sourced ingredients and delicate flavors.

For dessert, we enjoyed the chef’s creative interpretations of a flan and a chocolate-based dish—playful and inventive presentations that delighted the senses. Our meal was complemented by a margarita served on the rocks, smooth and lightly fruity. The ambiance is serene and peaceful, allowing the cuisine to take center stage. Located at the Edition, KI’IS is separate from the main property and surrounded by lush tropical foliage, creating a truly immersive dining experience.
