I had the pleasure of dining at Toro at the St. Regis Kanai on my recent trip to Mexico, and it completely shifted my view of resort dining. I’m usually not a fan of hotel restaurants, but Toro was a remarkable departure from all my preconceptions.
From the moment you arrive, the setting draws you in. The entry is tropical yet elegant, with lush foliage, cascading fountains, and steppingstones set directly over water. The outdoor dining space is modern but organic, surrounded by trees and greenery that create an atmosphere of serenity. It feels less like a restaurant and more like a Zen retreat.
That feeling of comfort only deepens when you meet Francisco, the general manager, who welcomes you as though you’re entering his home rather than a fine dining establishment. Toro is more than just a restaurant—it’s about family, community, and sharing an extraordinary culinary experience led by Chef Jesús.
The cuisine is nothing short of exceptional. Each visit was a journey, and I found myself returning three times in eight days. Every dish seemed to surpass the last. The fresh catch of the day, simply grilled and brightened with a touch of lime, was a masterclass in letting quality ingredients shine. The crab enchiladas were delicate, layered with subtle flavors—perhaps the most refined enchiladas I’ve ever tasted. Even the sides, from truffle fries to wild mushrooms, were perfectly executed and memorable.
Chef Jesús is not only a gifted chef but also a gracious host. His command of flavors and spices is understated yet consistently striking. In conversation, I mentioned my love for Persian rice, and on a later visit he surprised us with his own version of Persian herb rice—a thoughtful, personal gesture that spoke volumes about his warmth and hospitality.
Of course, no evening at Toro is complete without dessert. The tres leches cake he prepared was impossibly light yet indulgent, the perfect sweet note to end the meal.
Toro is not just a restaurant—it is a mystical journey of flavor, culture, and connection, one that left me enchanted and eager to return.
