I have a longstanding love affair with Mexico. The warmth of its people, the richness of its history, and the incredible diversity of its culture draw me back time and again. Every visit reveals something new. On this most recent journey, I found myself captivated by the beauty of ancient Mayan architecture and the mysticism woven throughout the region’s heritage.

Food is at the heart of every culture, and nowhere is that more evident than in Mexico. Sharing a meal has a remarkable way of bringing people together while celebrating tradition, craftsmanship, and community.

One of the highlights of my trip was dining at ITZAM in Kanai, Mexico. Set against a breathtaking waterfront backdrop, ITZAM, led by Executive Chef Carlos Segura, offers a contemporary interpretation of traditional Mexican cuisine while honoring the country’s rich culinary heritage.

The restaurant’s commitment to quality is evident in every detail. Ingredients are thoughtfully sourced from local farmers, fishermen, and artisans, and even the tortillas are made fresh in-house. The hospitality is warm and genuine, creating an experience that is as memorable as the cuisine itself.

We began our meal with vibrant seasonal salads showcasing local produce, followed by fresh tuna tacos. For our entrées, we enjoyed the catch of the day and tender chicken served with two distinct house-made moles, each offering its own depth of flavor. Decadent mashed potatoes and authentic Mexican street corn perfectly complemented the meal.

Every bite reflected exceptional freshness and craftsmanship. The house-made tortillas were impossibly light, delicate, and among the finest I’ve tasted.
